Pictou County Oatcakes - my version


The retreat ladies requested my version of this recipe because it is a little healthier than the original which has shortening, white flour and double the sugar but the healthy version is just as tasty. It took me forever to get this recipe up because I was trying to put in an imovie format but technology got the better of me so here it is written by hand!

Pictou County Oatcakes My Way

Combine:

2 cups regular oats

1 cup whole spelt flour

1/2 cup coconut sugar

1 tsp. sea salt

Cut in :

3/4 cup coconut oil

Add:

1/4 cup boiling water that has 1/4 tsp. baking soda dissolved in it.

Mix to combine all

Pour onto ungreased cookie sheet & form into rectangle 4" x 12" then cut into 14 bars (in half lengthwise then 6 cuts widthwise), spread slightly away from each other & bake in 400º for 12 - 14 minutes

Set pan on cake rack to cool if you can wait that long, I always enjoy one warm with a cup of tea.
