Mandalas have been around for many years and used in different cultures to represent in some cases the earth, sun, moon and the cycle of life. The word mandala is the Sanskrit word for circle. They were also used as a meditation tool and were required to be appealing to hold attention. There were certain requirements for it to be a meditation tool and many of the mandalas you see today including the ones I paint are not that sort as there is no set way that they have to be done. I guess I have too much time on my hands here in Freeport but I decided to try making bread from my own yeast and thought I would share the process with you. My friend, Sohee Mishra, inspired me to try this after seeing her post about it. I am using some of her instructions. This will hopefully allow me to cut down on the cost of bread because my favourite is now $7.50 a loaf for ezekiel bread.

This Jelly is more flavourful than apple jelly with a slight tang to it and was a total hit with the yoga retreat ladies, I will be sure to have some on hand next retreat season. You can also make a rosehip syrup or dehydrate them for tea. The rosehips can also be enjoyed raw provided you avoid the seeds as they have an irritating, hairy covering. I have developed a real liking for them and have a snack every time I come across a rose bush.
2 Quarts of fully ripe rosehips
6 cups of water
1/2 cup fresh squeezed lemon juice
3 + 1/2 cups sugar

Pictou County Oatcakes My Way
2 cups regular oats
1 cup whole spelt flour
1/2 cup coconut sugar
1 tsp. sea salt
Cut in :
3/4 cup coconut oil
1/4 cup boiling water that has 1/4 tsp. baking soda dissolved in it.

I know it has been too long since the last blog but there was so much to do to get ready for my first retreat, hopefully it won't be so long until the next one. The renovations and decorating got completed on time with the exception of my bedroom which was the overflow room while everyone was here. Hopefully it will be finished this fall because I desperately need closets!

Hi again, things are moving along so quickly now. I am finished teaching at Brock-Niagara Centre for Health & Well-Being. Scott Stevens from the Centre, along with my students, put on an amazing luncheon after the final class. I was so touched by all the kind words about their yoga experience with me as a teacher and also their prayers for my future endeavours with the retreats. They raised a fist full of money for me and I have already got it spent on 2 pairs of Hunter Rubber boots which will last me for the rest of my days and be a necessary accessory for life in the Maritimes.
